		<description>It must just be a squick factor thing for you. Some people just don&#039;t like the mouthfeel of a lot of fat.

I myself often eat pure fat - either beef or pork.  I just slice it about 3/4 inch thick and fry it.  I consider fried pork fat sprinkled with a wee bit of sea salt to be the ultimate food, taste-wise.  Also, being The Thrifty Mom I like the price ... a LOT.  My butcher gives it to me for free!

If you eat pork, I&#039;d try frying down some pork fat. It cooks a bit crisper. You may get used to it over time. :)

On a different note, I have to say that the concept of a $30 steak - much less an *gulp* hundred $$ steak made me break out into a cold sweat!

		<description>I eat both grass-fed and &quot;evil&quot; meat sous vide and I&#039;ve found that the grass-fed tends to turn almost mushy after a comparable time in the water-bath as the normal grocery store meat.  It seems to be more apparent for the longer cooked items like shoulder or london broil.  If I cut the cooking time in half it seems to solve the problem.

I was wondering if you had run into it at all?  Thanks!
